Pan Seared Cod and Asparagus Over Cilantro Lime Rice

I will be the first one to admit that we do not eat enough fish! Well, I decided to remedy that. On my last shopping trip I picked up some Cod (and some Salmon) and decided to try something new. The end result was absolutely amazing and Scott proclaimed that I had hit this one out of the park! The heat on the fish (use a good smoked paprika) was perfectly balanced by the refreshing Cilantro Lime Rice! I think I will be cooking more fish in the future! Especially this recipe! Enjoy and stay tuned for the Salmon!!

Kroger had some beautiful organic asparagus!
Browning the seasoned cod. It already smells delicious!
Time for the second side!
I forgot to snap photos of the sauce! Sorry….The asparagus looks pretty happy in there though!
The cod is now bathing in the sauce!
The rice is ready!
I also threw together a quick strawberry and candied pecan salad with a light balsamic reduction for the dressing.
All plated up and ready to eat!!
The pictures do not do it justice! You have got to make this one and see for yourself!

Thanks for continuing to stop by Y’all! I hope you are enjoying the blog so far. As always, if there is something you’d like to see, drop me a comment and let me know! Cheers! 🙂
