Pan Seared Cod and Asparagus Over Cilantro Lime Rice

I will be the first one to admit that we do not eat enough fish! Well, I decided to remedy that. On my last shopping trip I picked up some Cod (and some Salmon) and decided to try something new. The end result was absolutely amazing and Scott proclaimed that I had hit this one out of the park! The heat on the fish (use a good smoked paprika) was perfectly balanced by the refreshing Cilantro Lime Rice! I think I will be cooking more fish in the future! Especially this recipe! Enjoy and stay tuned for the Salmon!!

I also threw together a quick strawberry and candied pecan salad with a light balsamic reduction for the dressing.
All plated up and ready to eat!!
