Stuffed Mushrooms!

I have decided to upload each recipe, from our “Date Night at Home” dinner, as individual posts. There are way too many photos and doing it this way will allow you to easily find exactly what you are looking for! Up first: Stuffed Mushrooms!

Let me start by saying this recipe can be modified and customized to suit your individual taste! We like seafood, so I have used crab cakes as my main ingredient. If you aren’t a fan of seafood you could easily use diced mushroom caps with crushed crackers or even sausage and crushed crackers. If you choose to substitute, you will need to add up to 2 full sleeves of crackers.

Ingredients for stuffing:
10 good sized mushrooms, stemmed and cleaned. 9 caps will be stuffed 1 will be minced into the filling. (I used baby bella)
1/2 Shallot, minced
1 tablespoon olive oil
3 crab cakes (I purchased mine pre-made at the #Kroger meat/seafood counter)
1/4 cup seafood stock
1/3 cup butter
1/2 tablespoon fresh chopped parsley
6-8 crushed Townhouse crackers

Ingredients for topping:
1 stick butter
1/2 tablespoon minced garlic
1/2 tablespoon fresh chopped parsley
1/2 tablespoon fresh chopped basil
1 tablespoon Old Bay seasoning
1 cup white wine (I used Chardonnay)
1/2 wedge of Havarti cheese, shredded (I have also used mozzarella and it works just as well)

Directions:
Clean, stem and blot dry mushrooms. Arrange 9 of the mushroom caps in a baking dish. Mince the remaining mushroom cap and the shallot. Over medium heat, add olive oil to a large skillet. Sauté shallot and mushrooms until tender. Add the crab cakes and break up. Add in the butter, seafood stock and remaining ingredients. Stir until mixed well and butter is melted. Fill mushroom caps and return skillet to stove. Add the butter, garlic, parsley and basil. Once the butter is melted and the herbs are fragrant, add the wine. Simmer until slightly reduced. Pour over stuffed mushroom. Top mushrooms with freshly grated Havarti cheese. Bake in 350 degree oven for about 25-30 minutes. These can be eaten hot out of the oven or at room temperature. Either way, they are delicious!!
