The salad I featured in our “Date Night at Home” dinner is one of our all time favorites! Not only is it beautiful, it is also absolutely delicious!! I make this salad often and it really dresses up any meal. I hope you enjoy it as much as we do!
Ingredients:
- Baby spring mix
- 2 Heirloom tomatoes (garden fresh is best)
- Feta Cheese (I used the seasoned crumbles but you can use plain)
- Fresh Mozzarella (I used the pre-sliced but you can slice your own)
- Red Onion (sliced thin)
- A good dark balsamic reduction (I use Alessi. It is so good)!
Preparation:
Plate a bed of baby spring mix and top with the thinly sliced red onion. Next, layer the tomato sliced and mozzarella cheese sliced down the center of the plate. Top the entire plate with the crumbled feta cheese and then drizzle with the balsamic reduction. You can also add some freshly ground black pepper. I prefer mine without. Scott loves pepper on just about everything! lol
This recipe makes enough for 2 salad plates. You can easily adjust the recipe to make additional plates. I have also made this using Bleu’ Cheese crumbles and sometimes I will substitute baby spinach in place of the baby spring mix. The possibilites are endless!
So I told y’all I had a few blunders while preparing this dinner. One of those blunders was forgetting to put the balsamic reduction on the salad. I did manage to snap a pic of the bottle!! Anyway, it looks quite plain without it! lol
