Garlic Mashed Potatoes!!

If you have a keen eye for detail you likely noticed that my garlic mashed potatoes were missing from our “Date Night at Home” dinner plates! This was one of my many blunders. I actually made them and FORGOT to plate them! They sat there in the bowl, on the counter, unnoticed, until we had finished our meal! By then, we were too stuffed to eat any! lol

I do not have an actual recipe to provide you with this time. Preparing mashed potatoes, of any kind, is not an exact science! When preparing these for just Scott and myself I typically use about two handful’s of petite red skinned potatoes. You don’t need to peel them or cut them up, just pop them in a pan and cover them with water. Bring to a rolling boil and cook until they are easily pierced with a fork.

Next you will want to add minced garlic and butter to a large bowl. I used a heaping tablespoon of garlic and a whole stick of butter. You can use more or less based on your preference. Again, mashed potatoes are not an exact science.

Fresh parsley!

When the potatoes are done cooking, add them all to the bowl with the butter and garlic. Begin by stabbing them with a fork (I use a large serving fork) and mashing them up. Next you will want to add in some milk and salt. Add the milk a little at a time and whip with the fork (after each addition) until they reach your desired consistency. To add some color, stir in some chopped fresh parsley (I used about 2 tablespoons). If you don’t have fresh you can use dried. Finally, DO NOT FORGET TO PLATE THEM!!! lol
