As promised, here is my take on Bruschetta. We absolutely love this stuff! It’s quick and easy to throw together and if you have company, it’s sure to WOW them!

I start with a couple of medium to large tomatoes, a good loaf of crusty bread, balsamic vinegar, garlic, fresh chopped basil and parsley (occasionally a little cilantro if I have it on hand), salt and pepper and some freshly shredded parmesan cheese.

I start by blanching the tomatoes. Bring a pot of water to a rolling boil and add in the tomatoes, allow to boil for about 2 minutes. Promptly remove and set aside to cool.

Once cool enough to handle, you will want to remove the skin.

When you have the skin removed, go ahead and chop them up. You want to eleminate as many seeds and juice as you can. After I have mine diced, I just give them a light squeeze allowing the juice and seeds to drain out onto the cutting board. Toss the diced tomatoes into a bowl along with 2 Tablespoons chopped fresh basil, 1 Tablespoon minced garlic, 1/2 Tablespoon chopped fresh parsley, 1 Tablespoon dark balsamic vinegar, salt and pepper to taste. Mix together with a spoon and set aside.

Brush the top of your crusty bread with olive oil and pop into a 400 degree oven.

Shred some fresh parmesan cheese for topping.

Assemble as desired. I set out extra herbs along with some salt and pepper.

Enjoy!! I guarantee you, there will not be any left overs! This recipe made exactly enough for 4 good sized pieces. It can easily be doubled/tripled….whatever is necessary! lol
