Pasta, Please!

If you are anything like me, you love pasta! There is just something about a great pasta dish! The problem I run into when I cook pasta, is I tend to make enough to feed a small army! Well, I have officiallly solved the “cooking pasta for one” dilemma with this recipe! Not only is it quick and easy, it is absolutely delicious!!

You can have this pasta dish on the table in the amount of time it takes the pasta to cook. Start by preparing a serving size portion of spaghetti. While the pasta is cooking, throw together the sauce!

In a deep sided pan, add 1 Tablespoon ghee (or butter) and 1 Tablespoon of olive oil. Toss in 1 minced shallot and allow it to cook until slightly browned. Next, add the juice of 1/2 a lemon along with a few shavings of zest, 1 teaspoon dried parsley and 1/2 cup white wine. Allow to simmer until reduced.

Next, add in 1/3 cup of heavy cream, a Tablespoon of minced garlic, freshly shredded parmesan cheese, 1 Tablespoon fresh chopped basil and a handful of pre-cooked shrimp. Continue to simmer over medium-low heat until the sauce is thickened and reduced and the shrimp is heated through.

Add the hot cooked pasta directly to the pan along with a drizzle of the pasta water. Toss to coat and continue to simmer for a minute or two. Transfer the pasta to a large plate or pasta dish and top with additional grated parmesan cheese and basil.

Update – For those of you who do not like seafood….. No worries! You could easily add cooked chicken, mushrooms or whatever you like.
