Fresh Tomato Salsa!

I have made my fair share of homemade salsa over the years! However, up to this point, I have never been able to replicate the best restaurant salsa I ever ate….until now! After many, many attempts, I have finally done it! This salsa combines the exact consistency, texture and flavor combination that I have been attempting to achieve for a long time! And…..it uses FRESH tomatoes!!

I used 3, extra large, very ripe, heirloom tomatoes. (from my garden of course)! This recipe made exactly 8 cups of salsa. You will add all the ingredients to your food processor, (adding the tomatoes last) so you will be able to determine the correct amount needed, based on the size tomatoes you have to work with. Just add them until you fill the processor to the 8 cup line.

Ingredients:

  • Garden fresh tomatoes (blanched, skin removed, chopped)
  • 1 1/2 cups fresh cilantro, roughly chopped
  • 1 10 oz can of tomatoes with green chilis (drained)
  • 1 8 oz can of tomato sauce
  • 2 jalapenos
  • 10 dashes of tabasco sauce
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 2 Tablespoons minced garlic
  • 1/4 teaspoon garlic powder
  • 2 Tablespoons sugar
  • 1/2 large red onion (cut in chunks)
  • 2 Tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/2 tsp black pepper (I used freshly ground)

Preparation:

Begin by blanching your tomatoes in boiling water for 2 minutes. remove immediately and place in a bowl of ice water. Allow to cool. Meanwhile, in a large food processor, add all ingredients except for the tomatoes. Pulse 5 or 6 times to blend together. Next, peel, core and roughly chop the blanched tomatoes. Add the tomatoes to the processor one at a time and pulse a few times after each addition. Once all tomatoes have been added you should have reached the 8 cup line on your processor. If you have not, add additional blanched tomatoes until you have a full 8 cups. Process on high for a few seconds to reach desired consistency. I prefer no large chunks.

This is best served immediatly as fresh tomatoes undergo a change in taste and texture once refrigerated. Don’t get me wrong, it is still delicious served cold! I just prefer it made fresh!

If you do not have a food processor, I highly recommend this Ninja! It is awesome and has many uses. You can interchange the blender attachment and the processor attachment as well as the personal smoothie cups. I absolutely love it!
