If you’ve been following me, you know how much I love Sunday brunch. The past Sunday was no exception. I whipped up some delicious omelettes, country fried potatoes and sausage paired with sliced pears and kiwi!

For the omelettes, I used 3 eggs beaten with a splash of water, freshly shredded cheddar cheese, onions, fresh tomatoes from our garden, salt/pepper and some brown sugar cured ham. I also garnished the tops with a pinch of chopped parsley.
For the potatoes, I seasoned with salt, pepper, seasoning salt and garlic powder and browned them in about 3 Tablespoons of butter.
The fruit was peeled and sliced and the sausage was browned in a pan. Nothing to that at all! lol
Don’t forget the fresh squeezed orange juice! If you’re like me, add a little champagne and make it a mimosa!! Enjoy!!
