
I love lasagna! However, I rarely make it these days, because Scott and I can never finish a whole lasagna. I started making these lasagna roll ups as a quick and easy alternative. As an added bonus, you can triple this recipe and make a whole lasagna if you’ve got a bunch of hungry mouths to feed. I’m usually just cooking for two, so this works out perfect for us!
Ingredients:
6 lasagna noodles (cooked)
1 jar Spaghetti sauce
1 pound ground beef (browned and drained)
1 15 oz container ricotta cheese
1/2 of a 24 oz container cottage cheese
1/8 cup fresh shredded Ramona cheese
1/8 cup fresh shredded Parmesan cheese
1/4 cup fresh shredded mozzarella cheese
1/4 cup fresh chopped basil
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1 teaspoon salt



While the noodles are cooking and the beef is browning mix together the filling ingredients. Once the noodles are cooked, lay them out on parchment paper, top generously with the filling, gently roll them up and add to a glass baking dish. Before I add mine I coat the bottom of the pan with a layer of the pasta sauce/ground beef.,



Top your pasta rolls with with the remaining sauce and bake in a 350 degree oven until cheese is melted and sauce is bubbling. Top with additional Romano/Parmesan cheese and enjoy!!
