Glitzy Gourmet Grilled Cheese!

These are absolutely divine and after you make them, I doubt you ever go back to just plain ole’ grilled cheese! The main thing you need for a gourmet grilled cheese is some delicious cheese and a nice, thick sliced, homemade bread! I just happened to have both on hand so I whipped up these beauties!

Ingredients:

Homemade bread (or fresh from the bakery)

Fresh colby cheese, shredded (we got ours on a recent trip to Amish Country)

baby spinach

2 slices bacon (cooked and crumbled, grease reserved)

1 Tablespoon garlic, minced

ghee

1/4 cup mayonnaise

1/4 cup dijon mustard

1 teaspoon garlic powder

Start by frying/crumbling your bacon and shredding the cheese. Once the bacon is cooked and crumbled, return it to the pan in the reserved bacon grease. Add in a large handfull of baby spinich and the minced garlic, saute over medium heat until the spinach is wilted. Remove from heat and set aside.

Next, prepare your bread by brusing one side with a generous amount of ghee. Place ghee side down and spread the other sides with a generous amount of dijon spread. (To prepare the dijon spread. mix together the mayonnaise, mustard and garlic powder).

Finally, place your bread slices, ghee side down, onto a large skillet or griddle, top each slice with a serving of the spinach/bacon mixture and a large serving of colby cheese. Top each sandwich half with the remaining half and heat over medium low heat until they are nicely browned and the cheese is melted completely.
