I had some polish sausage in the fridge that I needed to use up tonight. Normally I would make sauted sausage, potatoes and onions. (which i love) However, I wanted something different and my creative juices were flowing! So, I whipped up this yummy pasta dish! Oh my goodness y’all! I could not stop eating it! The layering of all the different flavors makes this irresistably delicious! Fair warning, you will eat way too much of this!!! Thank goodness I wrote this one down as I was cooking it! It is absolutely perfect just the way I made it! lol

Ingredients:
- 14 ounce rope of polish sausage
- 1 pound bowtie pasta
- 2 Tablespoons Olive oil
- 1/2 large yellow onion
- 14 ounce can diced peeled tomatoes
- 1 handful of fresh baby spinach
- 1/2 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/4 teaspoon nutmeg
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup freshley shredded monterey jack cheese (plus more for serving)
- 1 Tablespoon minced garlic
- 1 Tablespoon freshly chopped basil (plus more for serving)
Preparation:
Boil pasta according to package directions.
In a large skillet, over medium high heat, saute onions and sausage in olive oil until the onion is translucent and the sausage is lightly browned. reduce heat to medium and add in the spinach. Saute until wilted. Add in tomatoes, heavy cream, garlic, salt/pepper, galic powder, nutmeg and cheese. Simmer over low heat. Drain pasta and add directly into the sauce mixture. Allow to simmer for about 5 minutes, stirring occasionally. Remove from heat and let stand 2-3 minutes or until the sauce is slighlty thickened. Top with the freshly chopped basil and stir to combine. Serve topped with addition cheese and basil if desired.
