Chicken Lo Mein!

Sadly, with this whole pandemic situation, we have not been eating out much. Needless to say, I was missing chinese food! Especially my favorite dish, Lo Mein! My cravings finally got the best of me this evening, so I set out to recreate it at home! It turned out so well that I decided to go ahead and publish it!

Ingredients:

  • 3/4 pound spaghetti noodles (cooked according to package directions)
  • 2 small boneless, skinless chicken breast partially frozen
  • 1 carrott, julienned
  • 1 large onion, sliced
  • 1 Tablespoon Ghee
  • 1 teaspoon ground ginger (fresh would be better but I was out)
  • 1 can bean sprouts
  • 4 Tablespoons soy sauce
  • 2 1/2 Tablespoons Pure Sesame oil
  • 2 1/2 Tablespoons seasoned rice vinegar

Slice your frozen chicken into very thin slices. I like to do it while they are partially frozen, simply because it is much easier to work with and you will get thinner slices without a lot of extra effort. Next, prep your carrotts and onions and start cooking the noodles. While the noodles are cooking, add the ghee, onions, ginger, 1 tablespoon of the soy sauce, 1 tablespoon of the rice vinegar and the chicken to a wok style pan over high heat. Saute over high heat until the chicken is cooked through. Add in the remaining ingredients along with the drained pasta. Toss together to coat well and continue to saute over medium heat until heated through.
