
I love banana bread. However, it has never been, quite what I thought it should be!! I have tried many, many, recipes…this banana bread, that banana bread, “The Best” banana bread….They all fell short of my expectations. So, here is my take on banana bread! It’s moist, it’s got that glorious, crispy outer crunch, it’s packed with flavor and you’ll find yourself wishing you had doubled the recipe!
Ingredients:
1 cup all purpose flour
1 cup crushed frosted flakes TRUST ME! (measure after crushing)
1/2 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 cup brown sugar (packed)
1/2 cup granulated sugar
1/2 teaspoon salt
1/2 cup chopped walnuts
2 cups mashed bananas (ripe)
1/4 cup whole milk
1/4 cup vegetable oil
2 eggs
butter and flour, to grease and flour your loaf pan













Start by greasing and (very lightly) flouring your loaf pan, set aside and preheat oven to 350 degrees.
Add all dry ingredients to a large bowl. In a 4 cup measuring cup, mash the bananas until you have 2 cups worth. Add the remaining wet ingredients, one at a time, mixing well after each addition. Add wet mixture to dry mixture and fold together, just until moistened. (Overmixing will cause your bread to be tough and dense). Pour prepared batter into your greased and lighlty foured, loaf pan and bake at 350 degrees for about 1 hour and 15 minutes. When finished, it should be golden brown and spring back slightly when touched in the center.
