Egg Roll in a Bowl!

I have been making this for years. I have tried it with ground beef, ground turkey, shredded beef, and ground pork. All are delicious! I guess the ground pork is more authentic to me, so that is my preferred method. However, you may prefer one of the alternatives. No matter your choice, you can’t go wrong. This is absolutely delicious! In fact, it should be labeled as some sort of “crack”! It is that addictive!

Ingredients:

  • 1 pound ground pork (or alternative)
  • 1 1/2 16 ounce bags cole slaw mix (with carrots)
  • 1 large onion, quartered and sliced
  • 1/4 cup soy sauce
  • 1 teaspoon ground ginger
  • 1 teaspoon sesame oil
  • 1 1/2 teaspoons minced garlic
  • Chives (optional)

Brown and crumble your ground meat. If using beef make sure to drain the excess grease. Once the meat is browned/drained, add in the onions and saute until they are translucent, add in all remaining ingredients and suate until the cabbage is wilted and the flavors have had a chance to meld together. Plate, top with freshly chopped chives and enjoy!

This is also very good reheated! It is one of my go to recipes if I have to pack lunch for work!
