Mediterranean Feta and Ricotta Stuffed Chicken Breasts!

I am so over bland, dry, boring chicken and I created this recipe for exactly that reason! This recipe is a quick and easy way to glitz up your boneless, skinless chicken breasts! The flavorful combination of cheese and spices takes it to the next level and by slicing before serving, the presentation gets a boost as well!

Ingredients;

  • 2 Tablespoons olive oil
  • 2 Large boneless, skinless chicken breasts; butterflied and pounded thin
  • 1/4 cup Mediterranean style feta cheese
  • 1/2 cup whole milk ricotta cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried rosemary
  • salt and pepper
  • Butchers twine

Preparation;

Butterfly your chicken breasts and pound them thin. Combine the cheeses and spices except for the salt and pepper and stir well to combine. Season both sides of chicken with a generous amount of salt and pepper. Spread 1/2 of the cheese mixture on each breast. Roll up long ways and secure with butchers twine. (trim excess) In a cast iron (or oven safe) skillet over high heat, sear the chicken on all sides for about 2-3 minutes per side. Immediately place into preheated 350 degree oven and continue cooking for 35-40 minutes or until the chicken is cooked through. Remove to cutting board, cover with foil and allow to rest 5-7 minutes. Carefully remove butchers twine. Slice and serve!
