
I don’t know about you, but I gained close to 30 pounds during the Covid shutdown! I have been trying to lose it for the past couple of months and I’m happy to say I’ve lost over 16 pounds! These last 10-12 pounds are downright stubborn, so I’ve really been watching what I eat. This tuna salad is not only delicious, but also filling and packed with protein! I serve it on a bed of lettuce, but you could also serve it on toast, bread, buns or with crackers. Enjoy those carbs if you opt for the latter! I’ll stick with the lettuce for now! 😅
Ingredients
2 cans tuna, drained
1/3 cup mayo
3 eggs, hard boiled, diced
1 Tablespoon Dijon Mustard
2 Tablespoons sweet relish
3 Tablespoons red onion, minced
1 teaspoon fresh thyme leaves, chopped
1 Tablespoon fresh parsley, chopped
1 celery rib, diced
1 teaspoon garlic, minced
Salt/pepper to taste
Mix well and serve.
