
So, I woke up Saturday morning and had the most intense craving for peach pancakes. I searched my cupboard for some canned peaches but to no avail. I was bummed but decided to fix some omelettes instead, using our fresh garden tomatoes! They were delicious but I could not stop thinking about peach pancakes! Fast forward to that evening at the grocery store. I am walking by the reduced produce section and what do I find? A bag of 4 perfectly ripened peaches!! So, you guessed it! By Sunday brunch, my craving was finally satisfied! This peach topping is the absolute best you will find and it is so easy to prepare!


For the pancakes, use your favaorite recipe!
For the peach topping:
- 4 Ripe peaches (or nectarines) peeled, pitted and sliced
- 1/2 cup sugar
- 1/3 cup water
- 1/8 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 2 Tablespoons orange juice
- 1/2 teaspoon corn starch
Preparation:
Begin by peeling, pitting and slicing the peaches. Next, make a slurry out of the corn starch and orange juice. Add all the ingredients to a heavy pot. Bring up to a boil then reduce heat and simmer (stirring frequently) until the peaches are tender. About 5 minutes. Remove from heat and allow to cool while you prepare the pancakes. Assemble the pancakes with butter, powdered sugar, peaches/sauce and top with whipped cream. Serve immediately! Delicious!!


This recipe made enough for 4 short stacks of pancakes. Adjust accordingly!
