
One of our local farms got a shipment of fresh Georgia peaches in and since the peach pancakes were such a big hit, I decided to try my hand at some stuffed French toast! Oh my goodness y’all!! This recipe is decadent! I had been tossing around a few ideas for the filling and finally settled on cream cheese with pecans. Even my husband could not stop raving about how all of the flavors came together perfectly! If you are a fan of brunch, this would impress even the most critical foodie! Go find your stretchy pants, you will need them!
Ingredients for the French toast:
- 1 loaf of fresh sour dough bread, cut into 8 slices (discard heels)
- 4 large brown eggs
- 1/4 cup whole milk
- 1 teaspoon vanilla
- 1/2 Tablespoon sugar
Whisk together and set aside.

Ingredients for the filling:
- 8 ounces cream cheese, softened at room temperature
- 3/4 cup powdered sugar
- 1 teaspoon vanilla
- 1/2 Tablespoon packed brown sugar
- 1/2 cup chopped pecans
Mix well


Spread the filling onto 4 of the slices of bread and top each with the remaining 4 slices to create 4 sandwiches. Dip each sandwich into the egg mixture making sure to coat all sides. Place onto a preheated 350 degree griddle and cook until golden brown on both sides. Remove to plates. Drizzle each sandwich with some peaches and sauce, dust with powdered sugar and top with whipped cream. Serve immediately.
