
It may not be fall yet but I am ready for all the fall foods! I have been craving this loaded potato soup for weeks so I broke down and made it for dinner the other night. It was still 90 degrees outside but I didn’t let that stop me and you shouldn’t either! This soup is thick, hearty and oh so delicious! If you are feeling fancy, like I was, you can even serve it in a cute little bread bowl!
Ingredients:
- 8 potatoes, peeled and cubed
- 3 Tablespoons salted butter
- 1/2 yellow onion, diced
- 8 strips bacon, chopped
- 1 carton chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 Tablespoon dried parsley
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/3 cup sour cream
- Salt/pepper to taste
- Fresh chives (optional)
- Additional cheese and sour cream for garnish (optional)
Add the chopped bacon to a large stock pot or Dutch oven, cook until browned and crispy. Remove from pan and set aside. Add chopped onion and butter to the bacon grease in the same pan, sauté until translucent. Add remaining ingredients and bring to a boil. Simmer over low heat for about an hour or until the soup has thickened to desired consistency. Top with the reserved bacon, fresh chopped chives, shredded cheddar cheese and sour cream.
