
One of my favorite things about cooler temperatures is all of the delicious fall foods! I love soups, stews and comfort foods! If you are looking for something that will fill you up and stick to your ribs, look no further! This recipe is absolutely delicious!
Ingredients:
- 2 pound chuck roast, trimmed and cut into bite size pieces
- 2 Tablespoons olive oil
- 1 large onion, diced
- 1/4 cup flour
- 1/2 cup dry red wine
- 1 carton beef stock
- 6 potatoes, peeled and chopped
- 2-3 carrots, peeled and chopped
- 2 Tablespoons Worcestershire sauce
- garlic powder
- onion powder
- Salt/pepper
- 2 Tablespoons tomato paste
Preparation:
Season the cubed roast with a generous amount of salt/pepper and the garlic and onion powder. Add the oil and the roast to a large Dutch oven and sear over medium high heat until nicely browned on all sides. Add in the onion and sauté until translucent. Sprinkle in the flour and continue to cook for 2-3 minutes. Pour in the beef stock all at once. Add the wine, Worcestershire sauce, tomato paste, potatoes and carrots. Bring to a boil. Reduce heat and simmer about an hour or until vegetables are tender and the stew has thickened. Season to taste with additional salt and pepper.
