
Since I seem to be on a roll with these “Pandemic Pantry” recipes, here is another one to use up some of that rice! As with the other pandemic recipes I have shared, this one is absolutely delicious and you will want to add it to your regular rotation. Honestly, pandemic pantry item or not, I love any kind of rice and any dish that includes it! So, of course, I couldn’t leave out one of my favorites! Unstuffed Peppers!! If you prefer to stuff your peppers, that is fine too, just omit the chopping! This recipe includes my The Absolute Best “Restaurant Style” Mexican Rice! – The Glitzy Gourmet as part of the dish, so you will want to make that first. Just follow the link! The rest comes together super quick and easy!
Ingredients:
- The Absolute Best “Restaurant Style” Mexican Rice! – The Glitzy Gourmet
- 1 1/2 pounds lean ground beef
- 3 peppers, chopped (I used 1 red, 1 orange and 1 yellow) If you are stuffing you will need more.
- 1/2 yellow onion, diced
- 4-6 ounces monterey jack cheese (shredded) plus more for serving
- 1/3 cup tomato sauce
- fresh chopped cilantro (optional)
Preparation:
Start by preparing the The Absolute Best “Restaurant Style” Mexican Rice! – The Glitzy Gourmet Meanwhile, in a large (wok style ) skillet, over high heat, brown the ground beef and onlon. Drain grease if needed. Add in the chopped peppers and tomato sauce. Stir well, reduce heat to low. Add in the cooked rice and shredded cheese, stirring until mixed through and cheese is melted. Plate and serve topped with fresh chopped cilantro and additional shredded cheese.
